Winemaking

During the 18 years running Cascabel in McLaren Vale, we always took pride on being involved in the whole winemaking processes, from growing grapes, to hand picking, fermenting and barrel ageing, etc. right through to bottling and packaging and we are determined to continue this fastidiousness.

We cherish our independence in this regard; making sure that all stages in the winemaking process are carried out without compromise and unnecessary meddling.

Grapes are all handpicked. This is essential to selecting healthy fruit especially in difficult years and is paramount in achieving the desired craftsmanship.

The wines are fermented with their natural yeast and bottled unfiltered.

These are requisites to producing wines that express the interactions grapes have with the environment in which they are grown followed by our down to earth approach to winemaking.
